What is sake?
Sake is Japan’s national drink, brewed from polished rice, water, koji and yeast and served like a wine. Around 14–16% ABV, it’s smooth and versatile, ranging from light and floral to richer, umami-forward styles like Daiginjo.
How to drink sake?
For DREAMSAKE, serve chilled from fridge (6–8°C), ideally in a wine glass. Sip slowly as you would a wine. We recommend enjoying alongside Japanese food. Traditionally, you pour for others at the table rather than topping up your own glass.
How is sake made?
Sake is brewed from rice. The grains are polished, washed and steamed, then inoculated with koji and mixed with Miyamizu water adding minerality. Yeast is added and to the ferments in stages before being pressed, filtered, then rested and bottled.
Best food pairings?
Daiginjo sake pairs brilliantly with sushi and sashimi, grilled fish and seafood, soft cheeses, charcuterie, light pasta, risotto and white meats.
How long does sake last once opened?
