Mung beans are excellent when sprouted and added raw to salads or soups, or cooked in stir-frys. They can be enjoyed simply as they are or enhanced with a dressing.
How to Sprout AKSOY Mung Beans at HomeSprouting at home ensures freshness and hygiene. Follow these steps for successful sprouting:
- Preparation: Add half a cup of AKSOY Mung Beans to a large bowl. Rub and rinse them well in lots of water at least three times, or until the water runs clear.
- Soaking: Soak the rinsed beans for a minimum of 9 to 12 hours. Do not cover the bowl completely to prevent odor development. Cover with a mesh basket. Beans are ready to sprout when the skin breaks, sometimes even during soaking.
- Sprouting Method (Jar): Transfer drained beans to a jar or container, ensuring no excess dripping water. Cover partially and place in a dark, warm area away from sunlight. Check after 12 hours. For longer sprouts, rinse, drain completely, cover partially, and return to the dark, warm place. If in a hot climate, sprinkle water every few hours.
- Sprouting Method (Cloth): Rinse and squeeze excess water from a clean muslin or thin cotton cloth. Spread the cloth, pour the drained beans onto it, bring the edges together, and roll tightly.

Rinse your Aksoy Mung Beans well, and check over for any stones.
Place 1 cup Aksoy Mung Beans and 3 cups water in a large pot.
Bring to a boil, then reduce heat and simmer until the beans are tender. This will take about 30 minutes.
Place 1 cup Aksoy Mung Beans and 3 cups of water into the insert of an Instant Pot.
Notes:
You can scale the quantity of beans up or down, but it should always be one part beans to three parts of water for cooking.
Drain any remaining water when the beans are cooked.
Cooked Mung Beans can be stored for up to 5 days in the fridge, or 3 months in the freezer.
