Willie’s Cacao is a British Artisan Chocolate Maker, set up in 2008 by chocolate pioneer and cocoa farmer, Willie Harcourt-Cooze. His aim is to introduce everyone to real craft made chocolate with pure, beautiful flavours.

"Few things give me such pleasure as watching someone gasping with delight as the chocolate melts, and the realisation dawns that all taste comes simply from the cacao."

Willie uses only the world’s great single estate cacaos, which like fine wines all have highly individual flavours.

To preserve these beautiful flavours, he makes the chocolate with 100% natural ingredients at low temperatures. This takes up to 3 weeks where industrial chocolate is made in a few hours.

Dark Chocolate Flavours

Our dark chocolate bars come in an array of flavours, each one made with the finest ingredients.

So for Almendra we use the best Marcona almonds, and roast them ourselves to capture that incomparable freshly roasted taste.

For flavour perfection we pair the flavour notes of the cacao with the ingredients. So Luscious Orange is made with a bean that tastes naturally of honey.

My Chocolate Journey

My passion for chocolate was born of a love of adventure. That spirit took me to Venezuela and led me to buy Hacienda El Tesoro, a cacao farm high in the cloud forest. Fifteen years later I started the first bean to bar chocolate factory in Britain for hundreds of years. I am a cacao farmer first, and an artisan chocolate maker second.

The first thing I made with my own cacao was hot chocolate. Sitting on the mountainside we added water and fresh raw cane sugar to 100% cacao. When I tasted that purity of flavour I realised that the world had lost touch with what real chocolate is. Something that was once revered as the food of the gods had become nothing more than a sugary confection.

I want everyone to experience some of the awakening I did, and to discover the joys of real craft made chocolate.
