Odysea Greek pine & fir tree honey is extracted cold and only very minimally filtered to preserve the beneficial properties of the nectar and pollen. This raw, unprocessed honey is produced by Alexandros Gousiaris, an artisan beekeeper in the small village of Ilias, central Greece. Alexandros ensures his bees are protected during winter and moved in spring and summer to areas abundant with conifers, resulting in a unique, complex flavor profile.

The honey has been awarded 2 stars by The Great Taste Awards for three consecutive years. Judges described it as 'luscious' with a 'gorgeous waxy consistency,' praising its subtle pine and fir flavors, perfect sweetness, hint of saltiness, and 'sheer sexiness.' It is 29% lower in sugar than typical supermarket honeys, according to analysis by Action on Sugar at Queen Mary’s University of London (March 2019). Crystallization may occur naturally and is a sign of purity—simply place the jar in warm water to return it to liquid form.
